Zucchini Bread Oatmeal

This high-protein, veggie-packed breakfast will power you through your day. The oats add complex carbohydrates and lots of fiber to keep you full until lunch. This is also a great way to sneak veggies in your kids’ breakfast!

Recipe:
(Serves 1) 

½ cup rolled oats
1¼ cups unsweetened almond milk
1 tsp cinnamon
⅛ tsp salt
½ cup finely grated zucchini
1 scoop French Vanilla INVIGOR Superfood Shake
1 tsp almond butter
2 tbsp chopped walnuts
2 tbsp raisins

In a small pot, stir together the oats, almond milk, cinnamon and salt. Bring to a gentle simmer for about 3-5 minutes, or until the oats have softened and thickened

Stir in the zucchini, INVIGOR8 shake powder, almond butter, walnuts and raisins. If mixture seems too dry, add a splash of water or almond milk.
