Homemade 'Reese’s' Peanut Butter Cups

Halloween is a recipe for sugar highs and crashes for both kids and adults! Skip the high-sugar candy this year and make these peanut butter cups instead. They’re high in healthy fats and protein, and low in refined sugar. We may be biased, but we think they’re better than the real thing.

Recipe:
(Makes 6)

For the chocolate:
1 cup chocolate chips
1 tbsp coconut oil
1 scoop Triple Chocolate Brownie INVIGOR8 Superfood Shake

For the peanut butter:
½ cup natural peanut butter
2 tbsp coconut oil
2 tsp honey
½ tsp vanilla extract

In a small microwaveable bowl, add the chocolate chips and coconut oil. Microwave in increments of thirty seconds, stirring after each, until the chocolate is melted. Stir in the INVIGOR8 powder.

In a separate, small microwavable bowl, add the peanut butter, coconut oil, honey and vanilla. Microwave for 10 seconds to melt the coconut oil, then stir to combine.

Line a standard muffin pan with six muffin cups. Add 1 tablespoon of the chocolate to each muffin cup. Place in the freezer for 10 minutes to solidify. Divide the peanut butter filling evenly between each muffin cup. Place in the freezer for 15 minutes to solidify. Top with the remaining chocolate and place in the freezer for 10 more minutes to solidify.

Store in an airtight container in the fridge or freezer.
