Peanut Butter Fudge Cups

January 24 is National Peanut Butter Day, and we're celebrating with these Peanut Butter Fudge Cups that are sure to satisfy your salty and sweet cravings without any added sugar! If you would prefer a chocolate version, use INVIGOR8 Triple Chocolate Brownie flavor instead of vanilla.

Recipe:
Makes 10 mini cups

½ cup peanut butter
¼ cup coconut oil, melted
1 scoop INVIGOR8 French Vanilla Superfood Shake
1 tsp vanilla extract
¼ tsp salt
3 tbsp chopped peanuts
2 tbsp cacao nibs
Sea salt

Line a mini muffin tin with 10 mini muffin cups.

In a bowl, mix together the peanut butter, coconut oil, INVIGOR8 shake powder, vanilla and salt.

Spoon about 1 heaping tbsp of the peanut butter mixture into each cup. Sprinkle with chopped peanuts, cacao nibs and sea salt. Place in the freezer for 30 minutes or until solid.

Store in an airtight container in the freezer for up to a month.
